In this time of year with Farmers markets popping up all over, you might see some beautiful eggplants and tomatoes. You may even see a cheese monger with fresh mozzarella. I have to stop myself from buying everything I get my grubby little mitts on.

Grab some eggplants and tomatoes of approximately the same diameter and get on this beautiful

Melanzana Caprese 




Ingredients

100% Organic Extra Virgin Olive oil
2 eggplants
6 oz-150 g mozzarella sliced
2 tomatoes sliced
basil
salt
black pepper

Preparation

Cut into slices and grill the eggplants
