Ingredients
- 1 1/2 cups heavy cream
- 1/2 cup chicken broth
- 1 tsp garlic powder
- salt & pepper, to taste
- 3/4 cup parmesan cheese
- 1 cup cherry tomatoes, halved
- 2 cups cooked chicken, diced
- 1/4 – 1/2 cup fresh basil, minced
- 19 oz tortellini, prepared
- 1 cup diced fresh mozzarella
- Balsamic glaze
Instructions
- In a large skillet, combine the heavy cream, chicken broth and garlic powder and salt and pepper.
- Over medium high heat, bring to a soft simmer.
- Slowly add the parmesan cheese, stirring until the sauce has thickened.
- Add in the cherry tomatoes, diced chicken and fresh basil. Continue simmering until everything is heated through.
- Add the prepared tortellini and stir to coat.
- Lastly, stir in the diced mozzarella.
- Top the dish with balsamic glaze and serve.
