Caprese Chicken Tortellini

Ingredients

  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • salt & pepper, to taste
  • 3/4 cup parmesan cheese
  • 1 cup cherry tomatoes, halved
  • 2 cups cooked chicken, diced
  • 1/4 – 1/2 cup fresh basil, minced
  • 19 oz tortellini, prepared
  • 1 cup diced fresh mozzarella
  • Balsamic glaze

Instructions

  • In a large skillet, combine the heavy cream, chicken broth and garlic powder and salt and pepper.
  • Over medium high heat, bring to a soft simmer.
  • Slowly add the parmesan cheese, stirring until the sauce has thickened.
  • Add in the cherry tomatoes, diced chicken and fresh basil. Continue simmering until everything is heated through.
  • Add the prepared tortellini and stir to coat.
  • Lastly, stir in the diced mozzarella.
  • Top the dish with balsamic glaze and serve.
